- Get 1/3 cup oil
- Prepare 8 ounces scallions
- Take 3 tablespoons dark soy sauce
- Prepare 3 tablespoons regular soy sauce

- Make ready 1 pound Chinese noodles
- Prepare 1/2 pound ground pork
- Make ready 1 tablespoon oil
- Get 1 inch ginger chopped

Scallion (green onion) noodle is one of the simplest Chinese noodles, using the very basic ingredients fresh alkaline noodles, scallion, oil, soy sauce and sugar. It is provided by almost every street noodle restaurants in many cities. It's labeled as Fresh Shanghai Noodles or Fresh Noodles. Pour oil into a cold large wok or high-sided skillet.
Instructions to make Shanghai Scallion Noodles:
- Heat oil in wok over medium heat. Slowly fry scallions until golden brown and crispy. Once golden, remove from oil and set aside
- Add soy sauce and sugar to oil. Cook at low heat for 2 min. Remove sauce from pan and set aside
- Heat 1 tablespoon oil to pan and cook garlic and ginger until fragrant. Add ground pork and cook through. Remove from pan and set aside.
- Cook noodles per the package instructions.
- To assemble, add noodles to individual bowls and start with 1 tablespoon of the oil/soy sauce mixture. Add more if desired. Top with the ground pork and fried scallions. Enjoy!
Add white parts of scallions to oil and set over medium-low. Since I live in Shanghai, I thought what better noodle dish to start with than Scallion Oil Noodles (葱油拌面 - Cong You Ban Mian). This dish is found in every Shangahinese restaurant and is a base for many other noodle dishes. Often times it will come with a side plate of sauce with veggies or meat to toss with the noodles. Originating in Shanghai, spring onion oil noodles (aka Scallion oil noodles, 葱油拌面) is a humble dish with great flavour.
