Now cover the pan and let the vegetables sweat for 2-3 minutes. - 4. Remove from flame, add the spinach. Mix well and cover. - 5. Keep it aside.
- For the Omelet; Beat the eggs in a bowl, add salt and pepper to it. You may also add some dried or fresh herbs as per your choice. For me a dash of mixed Italian herbs always comes handy.
- Heat the skillet and grease it with oil, wipe away the excess with a tissue.
- Spread the egg mixture on the hot skillet and cover the skillet. - Let the eggs cook for 2 minutes, now remove the cover.
- Release the omelet form the bottom of the skillet using a flat spatula. - Spread the vegetable mixture on one half of the omelet, and fold the other half on top of it.
- If using cheese place the cheese slices on one half and the cover it with vegetables and fold.
- Cover and cook for 20-30 seconds. - Remove on a platter and serve with your choice of toast.
