- Start preheating the oven at 180 degrees. Cook the peppers with a little olive oil for about 20 mins until the skin is brown. Peel and chop the potato and cook in salted boiling water until tender enough for a fork to get in. Chop the pistachio in very small pieces.

While the salmon is cooking mash the potato, add a pinch of salt, a pinch of nutmeg, a knob of butter and a bit of milk and mix until smooth but compact.
Spoon pistachio mixture evenly on each fillet. Gently press in place to form a crust. Place the salmon in a dish and season with salt and pepper. Top one side of the fillets with the pistachio mixture, pressing it down firmly with the back of a spoon. Return the pan to the oven.
