The ingredients needed to make Lemonade Scones:
  1. Take 4 Cups Self Raising Flour
  2. Make ready 300 ml Cream
  3. Prepare 1 Can Lemonade (Sprite or 7up)
  4. Prepare 1/2 tsp Salt

Sift the flour into a large bowl. Add the cream and then the lemonade. Quickly (but gently!) combine the ingredients into a dough in order to trap as many bubbles as possible into the mixture. Mixing the two of them made a milky buttermilk-like mixture.

  1. Preheat oven to 220c (fan bake is better)
  2. Mix all of the ingredients in a bowl, into a smooth dough. You'll need to get stuck in with your hands
  3. Tip onto a well floured baking tray, or baking paper
  4. You can either cut it into squares now, or save it until it's baked. The kids prefer the latter and it's less mess
  5. Bake for 15 to 20 minutes, until they start to turn a golden colour
  6. Cool on a wire rack when done

I used lactose free margarine instead of the butter. Sift flour into a large bowl. Combine lemonade and cream in a bowl. Add the lemonade and cream mixture to the sifted flour and gently fold ingredients together until just combined (don't over mix the dough as this will make tough scones). The dough should be fairly soft and a bit sticky.
