This is a very quick and simple no bake dessert cake. It uses graham crackers and a pudding mixture. It tastes just like an eclair, but there is enough for a crowd!! It is a great recipe for children who are learning to cook, there is no baking involved or any power kitchen tools.

  5. Preheat oven to 400°F.
  6. Spread batter into a greased 9" by 13" baking pan. Push dough up sides of entire pan.
  7. Bake for 30-35 minutes. It should puff and be golden brown. Remove and cool for 30 minutes.
  8. If you'd like to serve on a platter or serving dish, remove puff and do so before adding on pudding layer.
  9. Spread pudding over puff dough and refrigerate for 35 minutes.
  10. In mixing bowl, beat on medium speed the cream. Once it starts to thicken add gelatin mix then powdered sugar.. Beat until you have a thick whipped cream consistency.
  11. Spread cream over pudding.
