- Make ready 150 g bread flour
- Get 150 g cake flour
- Take 1.5 tbsp baking powder

- Get 35 g orange peel (cut into small pc)
- Prepare 1 egg (3 tbsp into batter and rest for egg wash)
In a small bowl, whisk together all glaze ingredients until smooth. Drizzle the orange glaze over the scones. The first thing you need to do is zest two to three mandarins. The easiest way to do this is with a citrus zester.
Steps to make Orange Peel Scones:
- Sift bread flour, cake flour and baking powder into the bowl.
- Mix #1 with butter and salt and rub them with hands until flour into small bits (crumble).
- Add orange peel and sugar into the bowl and mix with yogurt/milk and egg.
- Mix well and fold dough 3 times on the table.
- Put the dough in the fridge for 10 min. (if room temperature is high)
- Roll the dough about 1.5cm high and cut with cake mold ring (5.5cm)
- Egg wash the surface of cut dough.
- Preheat oven and bake it at 200C for 15 min. Rotate the tray and bake for another 5 min.
Since the peels on mandarins are loose you need to go slow zesting so you don't tear the skin. Unlike an orange where the peel is attached to the orange tightly which is easier to zest. Add egg mixture all at once to flour mixture. Using a fork, stir until just moistened. Turn dough out onto a lightly floured surface.
