Place the olive oil in a bowl. Dip each mushroom in the oil, covering entirely. In a bowl combine the garlic, mustard, cheese, cream, breadcrumbs and parsley and mix well until fully combined. Cut the stalks out of the mushrooms and chop into small pieces.

  5. In a deep pot, bring oil to around 300°F and place shrooms in. Fry till golden brown and drain for a minute on a rack or papertowels.
  6. Serve hot with horseradish sauce.

Then fry the stalks in butter along with garlic and spring onions (scallions). Add spinach, cream, salt, pepper and cheddar to the pan and cook for a few minutes until the spinach has wilted. Grate the mozzarella, Cheddar and garlic into a bowl, mix together adding the pepper and mustard. Finely chop the onion and add this to the cheese mixture. Squeeze together balls of the mixture and place on the top of the prepared mushrooms and pat down slightly.
