I made a spicy garlic mushroom to go with the noodles. If you add veggies in the noodles, then you can just serve it as one dish. If you want these to be spicier, you can double the hot sauce. Do not skimp on this, do use the quantity mentioned since you want a prominent garlic flavor in these noodles.
Steps to make Hot Chilli Garlic Noodles:
- Let’s boil the water in a wok/pan. Once the water starts boiling, add 1/2tsp of salt and 1tsp oil. Now add noodles. let them cook on medium flame. Once noodles are 80% cooked, turn off the flame. Drain the water. Now put the cold water on it.
- Heat oil in a pan. Once the oil is hot, add dry red chilli. Sauté for a while and take out dry red chillies from the oil. Don’t take out the seeeds.
- Now add chopped green chillies & garlic and sauté for a while. Now add onion, cabbage, carrot and fry them for 2 minutes on medium flame. Now add Kashmiri red chilli powder which is optional.
- Now add all colour capsicum & mix it well and fry them for a minute. Now add vinegar, soya sauce, red chilli sauce, green chilli sauce and mix it well. Now keep the flame high and add boiled noodles, salt and crushed black pepper and mix it well. Cook it for another minor high flame. Now switch off the flame.
- Now garnish with spring onion and serve it hot. Enjoy :)

Turn off the heat and while the garlic oil is still hot, add in the lao gan ma, dark soy sauce, ginger, and vinegar. Meanwhile boil your noodles according to the directions.
