With the hand blender, blend a jet of olive oil with a handful of basil leaves. Slice the tomatoes, season with a pinch of salt, and serve a mountain of fake "cheese" on top of each.

  1. Coat the tofu with salt.
  2. Wrap the tofu with paper towel, press it under weight to drain. I use a stoneware bowl. Sit in fridge half day/overnight.
