  10. Take 1/2 tsp Sugar

Add the stock, salt, and pepper and bring to a boil. Place chicken thighs, skin side up, over rice. Pour in the tomatoes, tomato paste, basil and chicken stock or chicken broth and stir to combine. Place the browned chicken on top then cover with a lid.

  1. Wash and soak rice for one hour.
  2. In a pan add water and salt.Bring to a boil on high heat and add the rice.Turn heat to simmer and let cook until the rice is cooked through.Turn heat off and keep aside.
  3. In a bowl whisk together olive oil, balsamic vinegar,pizza sauce, chilli flakes and sugar.
  4. Add the balsamic vinegar dressing to the rice and stir through.
  5. Add the tomatoes and basil leaves.
  6. Serve hot.

Serve with grated Parmesan cheese and fresh basil. In a small bowl, whisk together the vinegar, honey, coconut oil and pepper. Pour vinegar mixture over the rice and mix well. Add in the tomatoes and basil. Toss rice mixture again until well combined.
