Cut the tofu into bite size cubes and put in a bowl along with the tomatoes. Pour the vinegar mixture over and carefully toss (trying not to break the tofu). Let the tofu cubes cool and then place in a covered dish in the refrigerator. Place the onion and tomato in a serving bowl; sprinkle with the lemon juice, basil and salt.

After the tofu has been prepared, toss the spinach with the marinated tomatoes and top with hot or cold Sriracha and Soy Sauce Tofu, chopped avocado, and a sprinkle of pumpkin seeds.
